This attached recipe was entered in the 1990 Rice Cooking Contest by Kathy Rod, wife of Rice Farmers Coop member Glen Rod. It was published in the 2001 Wharton County Rice Committee; Rice: “The Leading Lady of Grains”.
3 Cups Cooked Rice
1/3 Cup Cooked Onions
1 Teaspoon Salt
1 ½ Cups Milk
1 CUP (4 OZ.) Grated Cheese
1/3 Cup Chopped Bell Pepper
1 Tablespoon Dried Parsley Flakes
Combine all ingredients. Stir well; place in lightly greased 2-quart shallow baking dish.
Bake uncovered at 350 degrees for 45 minutes or until set.
Cut into squares to serve.
