This recipe was entered in the Rice Dish Contest at the 1986 Wharton County Rice Clinic by Ruby Jean Rod, wife of Andrew Rod and mother of Glen and Stanley Rod.
Ingredients:
3 cups Cooked Rice
4 Chicken Breasts, cut in strips
¼ cup Oil
¼ cup Green Onion, chopped
¼ cup Bell Pepper, chopped
¼ cup Onion, chopped
¼ cup Celery, chopped
¼ cup Parsley, chopped
1 wedge Garlic, finely chopped
1 carton Sliced Fresh Mushrooms
1 can Tomato Sauce
1 can Tomato Paste
1 tablespoon Italian seasoning
1 teaspoon Sugar
Directions:
Quick fry the chicken strips in oil. Remove chicken and saute’ all the chopped ingredients. Then add the Italian seasoning, sugar, tomato sauce, tomato paste, and chicken. Simmer for 20 minutes. Serve over the cooked rice.
